A quick salad

OK, so a salad is not so much cooking but it can be a meal in itself and a healthy one too.

Here is an idea of mine which I tossed together (arf!). I am pleased to confirm it has gone down a storm at two dinner parties and my parents absolutely love it, often requesting I make it for them.

Ingredients:

Red mini cos lettuce leaves/Little gem lettuce chopped (usually 2 in a pack)
Cherry tomatoes/baby plum tomatoes
1 avocado cubed
a tub of mozzarella pearls
Walnuts
French dressing

Chop the leaves and mix with the other ingredients before drizzling enough french dressing to give the salad that tangy taste.  Erm, that’s it!  It takes barely 5 minutes to prepare.

I’ve not specified measurements as such because it’s down to how much you personally prefer.  You can prepare part of the salad in advance but don’t add the avocado until you are ready to serve because that will turn brown.

Another salad idea is chopped lettuce with tomatoes, walnuts and balsamic vinegar.  I also added some grilled trout to the mix that I had seasoned with salt and pepper before cooking. Suddenly salads are sexy and I wouldn’t look twice at the prepared rubbish they sell in supermarkets now. Have you got any salad suggestions of your own?
